Creamy Garlic Chicken Pasta with Mississippi Spice Company Poultry Blend

This rich and comforting pasta dish combines tender chicken, crispy bacon, and fresh vegetables in a creamy garlic-Parmesan sauce. The Mississippi Spice Company Poultry Blend adds savory depth to the chicken, while the Cajun or Veggie Blend gives the sauce a flavorful kick. Perfect for family dinners or impressing guests, this dish is a true crowd-pleaser.

Ingredients

  • 3 large boneless, skinless chicken breasts

  • 2 Tbsp bacon grease (or oil)

  • 2 Tbsp unsalted butter

  • 8 cloves fresh garlic, minced

  • 6 strips crispy bacon, chopped

  • 10 oz fresh baby spinach (1 bag)

  • 3 green onions, chopped

  • 8 oz baby bella mushrooms, sliced

  • 2 cups heavy whipping cream

  • 3 Tbsp Mississippi Spice Company Poultry Blend

  • 1 Tbsp Mississippi Spice Company Cajun Blend or Veggie Blend

  • 1½ cups grated Parmesan cheese

  • 12 oz fettuccine or angel hair pasta

  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the bacon: Preheat oven to 350°F. Line a baking sheet with parchment paper and bake bacon for 40–45 minutes, or until crispy. Let cool, then chop. Save 2 Tbsp of the bacon grease.

  2. Prep veggies: Mince garlic, chop green onions and parsley, and slice mushrooms.

  3. Start the sauce base: In a large skillet over medium heat, add bacon grease and butter. Sauté the garlic until fragrant and lightly golden. Remove garlic and set aside.

  4. Cook the chicken: Season chicken with 2 Tbsp Mississippi Spice Company Poultry Blend. Pan-sear until golden brown on both sides. Transfer chicken to a Dutch oven or large pot.

  5. Build the flavor: Add garlic, chopped bacon, mushrooms, spinach, remaining Poultry Blend, and Cajun or Veggie Blend. Stir and cook until spinach is wilted.

  6. Make it creamy: Pour in heavy cream and bring to a gentle boil. Stir in Parmesan, green onions, and parsley (reserving some for garnish). Reduce heat, cover, and simmer.

  7. Cook the pasta: Boil pasta until al dente, drain, and add to the pot. Stir well to coat pasta in the creamy sauce.

  8. Finish and serve: Plate pasta and garnish with extra parsley and green onions.

Pro Tips

  • Flavor twist: Use smoked bacon for an extra layer of flavor.

  • Make ahead: The sauce can be prepared a day in advance; just reheat gently and add fresh pasta before serving.

  • Pairing idea: Serve with garlic bread and a crisp side salad for a complete meal.
